
I like a warm, filling breakfast in the middle of winter. I think this Blueberry Banana Baked Oatmeal hits the spot. It has a cake like texture, without being overly sweet. It’s a great way to change up “oatmeal” in the breakfast rotation so that it’s not boring or easily worn out. I also find this recipe useful when serving company.
BLUEBERRY BANANA BAKED OATMEAL RECIPE DETAILS

You’ll need these ingredients:
- 2 cups organic rolled oats
- 1 cup fresh or frozen blueberries
- 2 ripe bananas
- 2 eggs
- 1/4 cup maple syrup
- 3 tablespoons avocado oil
- 1 tsp vanilla
- 1 3/4 cups non-dairy milk
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- sprinkle of pumpkin pie spice
- 2 tablespoons sugar (optional)
This recipe is very simple. Place the dry, rolled oats into a pie plate. Layer the blueberries on top or mix them in. Mash the bananas in a separate bowl, then mix all of the wet ingredients with the bananas. Use a whisk to beat well. Add the cinnamon, baking powder, and sea salt to the wet mixture while beating everything together. Pour this wet mixture over the dry oats and blueberries. Sprinkle the top with pumpkin pie spice. You can also sprinkle a few tablespoons of sugar over the top. This helps to crisp the top as it cooks in the oven.

WHY ORGANIC OATS?
Conventional rolled oats generally carry a high glyphosate load. This is because farmers will heavily spray the oat plants with glyphosate to dry them out before harvest. (This may be changing in the industry.) For this reason, I always look for organic rolled oats. This particular brand even labels itself glyphosate free. I find that the price fluctuates with these oats (sometimes wildly). I purchase when the price is around $10 for a five pound bag. These are also generally in stock (at a stable price) at Whole Foods.

How to Make Blueberry Banana Baked Oatmeal
Ingredients
- 2 cups organic rolled oats
- 1 cup fresh or frozen blueberries
- 2 ripe bananas
- 2 eggs
- 1/4 cup maple syrup
- 3 tablespoons avocado oil
- 1 tsp vanilla
- 1 3/4 cups non-dairy milk
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon sea salt
- sprinkle pumpkin pie spice
- 2-3 tablespoons sugar (optional)
Instructions
- Preheat the oven to 375.
- Add the rolled oats to a pie plate. Sprinkle the blueberries on top of the oats or mix them in a bit. Either way is fine.
- In a separate mixing bowl, mash the two ripe bananas. Add the two eggs, maple syrup, avocado oil, vanilla, and non-dairy milk. Beat with a whisk until everything is well mixed and frothy.
- To the wet mixture, while whisking, slowly sprinkle in the cinnamon, baking powder, and sea salt.
- Pour the seasoned wet mixture over the dry oats and blueberries.
- On top of everything, sprinkle a bit of pumpkin pie spice. I usually add a few tablespoons of sugar over the top. This helps the baked oatmeal to crisp and caramelize in the oven, but is completely optional. It will bake fine and still be mildly sweet without the added sugar.
- Bake on the top rack at 375 for 45 minutes. When done, let the baked oatmeal sit for five minutes or so before serving. Enjoy!
