Real Food, Gluten-Free, Dairy-Free, IBD-AID (Phase I: sub honey for powdered sugar)
Do you need a healthy treat for Halloween or the entire season of Fall? These “Candy Corn” Gelatin Jars are made using fruit and vegetable juice, grass-fed gelatin, and coconut yogurt. Powdered sugar is optional in the final layer.
These “Candy Corn” Gelatin Jars make for a yummy, dye-free, nearly sugar-free treat. They can be sweetened with juice only. If preferred, for additional sweetness, you can choose to add a bit of honey to the juice and gelatin.
These are quick to prepare and require very little cleanup. They do take a while to set in the refrigerator, so plan ahead. If I start in the morning, these are generally ready by mid-afternoon.

Because I like to make gelatin as an occasional treat, I keep a jar of this Organic Pineapple Juice in our pantry at all times as well.
I sometimes purchase this Organic Orange Carrot Juice when I don’t have the time or bandwidth to juice my own carrots.
“Candy Corn” Gelatin Jars
Ingredients
- 6 jelly jars
- mixing bowl
- sauce pan
- whisk and/or hand mixer
- 2 c pineapple juice
- 2 c orange carrot juice
- 2 tbsp grass-fed gelatin, divided
- 1 c unsweetened, unflavored coconut yogurt
- 3 tbsp organic powdered sugar
Instructions
- In a mixing bowl, pour 1 c of the pineapple juice. Sprinkle 1 tbsp of gelatin on the juice. This will “bloom” while you heat the remaining pineapple juice.
- Heat 1 c of pineapple juice until boiling. Remove from heat and add this to the mixing bowl. Whisk to combine.
- Spoon this into the bottom of each jelly jar. Cool for three hours in the refrigerator.
- After three hours, repeat steps 1-3 using the orange carrot juice.
- After another three hours, put the coconut yogurt and powdered sugar in a mixing bowl. Using a whisk or hand mixer, combine until the yogurt begins to stiffen a bit. Layer this atop each jar.
- These can be served after adding the top layer, or they can return to the refrigerator for later.
- 3. Top each pint jar with a layer of unflavored coconut yogurt. Serve cold.
