I think I've made this three times in the past two

I think I've made this three times in the past two months. That's a lot for me. I don't normally repeat recipes that often, but this has become one of my recent favorites. I've served it to company and it's crowd approved.

This Mediterranean Beef Roast is prepared with garlic, onions, roasted red peppers, sun dried tomatoes, and marinated artichokes. It’s a pretty simple grab-and-go mixture, but packs big flavor.

This cooks low and slow in a braiser or Dutch oven, so it's perfect for a Saturday at home or Sunday dinner. Let me know what you think!

I taught a children's Sunday School class this morning. We read this passage, written by Paul:

"Five times I received at the hands of the Jews the forty lashes less one. Three times I was beaten with rods. Once I was stoned. Three times I was shipwrecked; a night and a day I was adrift at sea; on frequent journeys, in danger from rivers, danger from robbers, danger from my own people, danger from Gentiles, danger in the city, danger in the wilderness, danger at sea, DANGER FROM FALSE BROTHERS; in toil and hardship, through many a sleepless night, in hunger and thirst, often without food, in cold and exposure." 2 Corinthians 11:24-26

All of this, Paul endured for the sake of spreading the gospel message. We talked about the work of Satan...how he works hard to stop the salvation story from spreading. We talked about endurance. Most of us felt that, unlike Paul, we may have given up the mission under such circumstances. Paul's journeys read like an adventure story that no one would want to travel. And yet he persisted, with the help of God.

Of Paul's entire list, the one that struck me the most was, "Danger from false brothers." These are not people on the outside. These are not strangers. Unbelievers. These are brothers in faith who bring danger to Paul. These are friends.

If you've worked in ministry long enough (as a professional church worker or lay person), you've probably experienced this too. It's devastating. In my mind, it's more soul crushing than any shipwreck or beating. So how are we to persist under such a trial?

I think we take Paul's other words to heart.

"But the Lord stood by me and strengthened me, so that through me the message might be fully proclaimed." 2 Timothy 4:17

"Blessed be the God and Father of our Lord Jesus Christ, the Father of mercies and God of all comfort, who comforts us in all our affliction." 2 Corinthians 1:3

Even in ministry, there is need for healing. Sometimes that healing is ongoing. It can take years. But for the sake of the gospel, we should persist, with the help of God, even as we work to heal our hurting hearts.

Waiting is hard.

When waiting for something your heart desires, there can be an intense storm of emotion. Sometimes there's impatience, anxiety, or sadness. Sometimes anger and fear jump in to shake things up. Waiting is uncomfortable. Often, it's lonely.

Whatever you may be waiting for today, remember these words from Proverbs 3:5-6. "Trust in the Lord with all your heart, and lean not on your own understanding. In all your ways acknowledge Him, and He will make your paths straight."

God tenderly holds the desires of your heart. He is FOR you. Whether the thing that you're waiting for ever comes to fruition, trust that God is preparing a beautiful path for you. His timing is good and right. His plan for you is like a blossom yet to unfold.

Do you make an effort to introduce your child (and maybe yourself) to new foods?

The health of a person’s microbiome vastly improves with food diversity. Have you ever stopped to think about how many individual whole foods you eat in a week or a month? Have you ever tried to systematically raise that number? I have! It can be as easy as finding one new-to-you food a week.

My Sam’s Club had these fresh Lychees this week. You peel the exterior and eat the inside (minus the pit). I think they taste like a citrusy grape.

The business of writing is hard and tedious and lonely (by nature). Sometimes it helps to have a cool breeze and a pretty place to work.

Have you ever had this happen?

I had a very, very busy school year. It was overscheduled with clients, writing projects, homeschool responsibilties, and extra curriculars (my fault). I made it through the year, but it was a grind. Every single week was exhausting...a carefully curated schedule that kept me busy all day, every day, on the weekends, and often into the evenings.

So here's the thing. When I came to the end of my school-year responsibilities, I expected to feel amazing...free...lighthearted...relieved. Do you know what really happened? A wall of fatigue and even depression slammed into me. For a whole week, I sat in my house unable to fucntion at all. I've mostly emerged from that sad stupor, but why did it happen?

I had been living in a heaightened state of stress. My body was probably over producing cortisol all year long to keep me functional. Instead of feeling better when the stress lifted, I felt worse because my cortisol production crashed. This was the second time in my life I've experienced this phenomenon. I distinctly remember feeling the same way after leaving a very stressful teaching position.

I've already restructured next year's schedule so that I don't do this to myself again. We have to learn to listen to our bodies. Rest is essential to well-being. It can't just be rest every 9-10 months. We need rest built into every day of the year. This means built-in time without responsibilities. Time for hobbies. Time to be in nature. Time for prayer and Bible study.

After doing nothing for a week, I slowly began to feel better. The list in the image is a to-do list I made of all the tasks I ignored while being over-scheduled. I've been using the past few weeks to slowly tick them off. The fact that there are so many is just another sign that my world was out of order. I'd lost balance.

I speak from experience: If you're living a high-stress life, it's time to re-evaluate your choices. How can you build in time for rest? How can you find everyday moments of peace?

The truth is, our health and well-being depend on balance.

Happy Mother's Day!

I was blessed with a wonderful, faithful, loving mother. I have known many others in my life. Whether your Mother's Day is happy or painful, filled with the children you prayed for, or missing faces that you desperately wanted, know that you are loved. You are seen.

Sometimes Mother's Day is hard. Our broken world makes this day hard. But even in brokenness, we can look for beauty. Look for a memory that radiates joy, laughter, and togetherness.

Sometimes "mothering" comes from our mother and sometimes it comes from one who steps in to mother well. Sometimes, as mothers, or women who want to be mothers, our hearts can be poured out for one who needs a mother, even if they're not ours. This too is beautiful. This heals our broken world.

Happy Mother's Day! Love big. Love well. Remember joyful memories. Look for laughter. Find togetherness...in your own family, or with those who need the heart of a mother. You have enough love to give.
